any mp3 players with large capacities that do not require software?

Well, I believe you need to look for any players that are UMS, as they don’t require special software. I did a quick google search for UMS Mp3 players and found thousands of results. I found the iRiver H340 (40 GB) and the Creative Zen Touch (40 GB). They are both pretty cheap.
The Toshiba Gigabeat and the Microsoft Zune both require special software, so this would be a no-go for you if you wanted an UMS device.
Alternatively, you could download another type of firmware for your iPod, so you wouldn’t have to use iTunes. Perhaps iPod Linux or Rockbox would suit?
CHESTER
The RCA Lyra is exactly what you want. 40 gb and you can just drag and drop your entire music folder right into it. As long as you have it well organized, navigation isn’t a problem. However. if you’ve been letting iTunes organize your folder for you, it could take some time to get it in order. It comes with Musicmatch software but it’s unnecessary. It’s a little bigger than the newer players but it’s built like a tank.
